Butter Beer

I'm hosting a little End of the School Year party for my youngest and her friends. We're doing an ice cream bar and a soda bar. I scoured this blog for my Butter Beer recipe to no avail!!! I have made it several times for parties from my High School daughter's Halloween Dance to my youngest daughter's Hocus Pocus themed parties every year.

Guess I need to get it down!!

Butter Beer
2 liters cream soda, chilled
1/4 tsp caramel extract
1/4 tsp butter extract

For the Topping
1 c heavy whipping cream
1/2 c butterscotch topping
1/4 c powdered sugar

*For Halloween themed parties we made ghosts on the side of clear plastic cups with marshmallow fluff and a sharpie

Feetloaf

 Feetloaf

1 large onion divided

2 eggs *use egg substitute

½ cup milk

1 cup Italian bread crumbs

2 lbs ground beef

2 tbsp ketchup

1 teaspoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon pepper

Sauce

1 cup ketchup

¼ cup brown sugar

3 Tbsp yellow mustard

Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper or foil and spray with cooking spray.

Dice ½ an onion.

In a medium bowl combine eggs, milk, breadcrumbs, ground beef, onions, ketchup, Worcestershire, garlic powder, salt, and pepper. Mix until just combined.

Shape into a foot on prepared baking sheet. Using remaining half of onion, add slices of onion to the toes as toe nails, and a large slice to the ankle area as a bone piece.

Bake for 45-55 minutes until done.

While baking, make the sauce. Combine ketchup, brown sugar and mustard in a small saucepan. Heat over medium until warm.

Monster Munch

Monster Munch! A fun spin on chex mix!! My kids and their friends loved it!

Monster Munch
5 ounces pretzels
2 ½ cups Apple Jax Halloween version
2 ½ cups Corn Chex
2 cups M & M's chocolate candies Halloween edition
2 cups white chocolate chips (12 ounce bag)
1 ½ Tablespoons vegetable oil
Candy eyeballs

In a VERY large bowl (or two medium bowls), combine the first 6 ingredients. Set aside.

In a microwave safe bowl, heat white chips and oil on high for 60 seconds (you could also melt chocolate and oil in a double boiler pan).

Stir and microwave for another 30 seconds and stir until completely melted and smooth (you may need to microwave for a couple more seconds).

Pour melted chocolate over cereal mix and stir until all the cereal is evenly covered with white chocolate.

Spread cereal mix on 2 large baking sheets (I used cookie sheets) lined with wax paper.

Let cool and then break apart into chunks.

Store in an airtight container.

*This time I added Hocus Pocus cereal (it has purple, orange and green cereal and tiny cereal marshmellows)

Soup in a Bread Bowl

Isn't this so cute? I picked up these pumpkin looking bread bowls at the grocery store and made a quick potato corn chowder for a festive fall dinner.

I used scissors to cut the tops off the bread bowls, then hollowed out the delicious bread inside and set it aside to be shared and dunked at the dinner table, then filled the hollowed out bowls with delicious soup!!

I made the soup in less than 30 minutes - and with these fun bowls - this is a meal the family will remember!

The soup isn't really a recipe - it's just Bear Creek potato soup (dry mix) and then anything you have around. I fried up some southern style hash browns in it's own pan, then in the soup pot, sautéed some onions, followed the directions on the package then added the cooked hash browns, corn, ham and cheese that was left over from a party tray the night before and voila!

My husband isn't really a soup enthusiast and he was the first one done! The kids thought it was so fun that you could eat the bowl… I'll definitely be doing this again.
